The Wines: (Spring 1996)

1993 Chaleur Estate:
Chaleur Estate is DeLille Cellars' proudest effort, a blend of
Cabernet Sauvignon, Merlot and Cabernet Franc from eight of the most
venerable vineyards in Washington State. Vineyard lots are kept
seperate and aged in three types of 100% new barrels of French oak,
providing us the blending options to "hand-craft" this red wine. The
result is an evocative red wine with depth, complexity, focus and
elegance - all captured in the French word for waarmth, "chaleur".
To safegaurd the distinctive quality of Chaleur Estate, we "hand-pick"
all our grapes and hand sort during crushing, selecting only the very
best berry clusters. The wine is barrel-aged for 20 months. Five
months before bottling, Chaleur Estate is blended, and the flavors are
allowed to "marry" in the barrel. Finally, a minimum of six months of
bottle aging puts the final touch on this handcrafted wine.

Vineyard: 42% Ciel du Cheval Red Mountain (Cab.), 20% Ahtanum Ridge (Cab.), 2% Blackwood Red Mountain (Cab.), 15% Hogue's Staley Ranch (Merlot), 10% Ciel du Cheval Red Mountain (Merlot), 11% Hogue's Winery Block (Cab. Franc).
Barrels: 100% new, 61% Demptos Chateau, 31% Sequin Moreau Margaux, 8% Dargeau et Jagle Chateau

1993 D2:
D2 is our way of paying homage to the Bordeaux tradition of making
"deuxieme", or second wine. As tradition, it represents an
abbreviation for our second wine from DeLille Cellars. And at the
same time, D2 is also the name of the grand route du vin, or wine
road, that travels through the historic chateau region of Bordeaux.
All of our Cabernet Sauvignon, Merlot and Cabernet Franc grapes are
"hand-picked", from some of the oldest and most venerated vineyards in
Washington State. We hand-sort before crushing, and use only the best
berry clusters. Our vineyard lots are kept seperate and aged for 20
months in 100% new barrels of French oak. Each of these lots are
respected wines in their own right. Yet during our blending trials,
some lots may not be a benefit in the delicate tuning of Chaleur
Estate. We take full advantage of these quality wines by using them
to hand fashion the distinctive taste of D2.
