Whites:

1993 Chardonnay: Our chardonnay is an elegant blend of full bodied Columbia Valley Chardonnay grapes, some picked at their sugary peak, others picked at their acidic optimum. They are then fermented and enriched in oak cooperage to impart depth and complexity and finally blended into a truly noble white wine. Enjoy with seafood, fowl, veal, or pasta. A Cellar Master's Reserve is also available in limited quantities.

1995 Chasselas: Near perfect growing conditions for this varietal permit it to be fermented into a wine whose quality is unsurpassed even in its homeland - Alsace region of France. It is crisp and dry, a welcome change from traditional white wines and a delightfully pleasant surprise to a sophisticated palate. Serve with fish, fowl, and white sauce pasta.

1995 Kaspar's Select White: Marc Donier, sommelier at Kaspar's, has personally selected this combination of oak fermented, free run wines and has directed their blending especially for use in one of the west coast's finest restaurants.

1995 Madeline Angevine: Delicately refreshing, distinctively aromatic and unusually flavorful, Mad Ang is rare because it tastes best when vinified from grapes grown in the extreme northern limits of wine producing latitudes. It is a treat with chicken and seafood and favored as an aperitif in Europe. A Cellar Master's Reserve vinified from free run juice is also available in limited quantities.

1995 Muller Thurgau: This fresh, fragrant wine has a delightful tang, favored as an aperitif and excellent served with veal, poultry, grilled salmon or ham.

1993 Okanogan Dry Riesling: Fresh and fruity with intense character and flavor, this wine is produced from an obscure Hungarian grape having definite Riesling characteristics. Serve chilled with oysters, fish or fowl.

1994 Oyster Creek White: Selected from estate grown grapes by the management of Oyster Creek Inn expecially for their cellar, then blended to compliment the finest seafood menu.

1995 Siegerrebe: Considered by many to produce the most aromatic of grape wines, the Siegerrebe grape is grown in cooler wine regions of Europe, principally along the Rhine in Germany. A distinctly fruity flavor sets this wine apart and gives it an unforgettable, unique taste. Serve with seafood, chicken and holiday fowl or as a lip- smacking accompaniment with light snacks and picnics.

1993 Cab/Merlot: A 50/50 blend combines two of our best oak aged classics to make this a claret drinker's delight.

1993 Cabernet Sauvignon: Vinified from grapes cultivated in the heat of the lower Columbia Valley at Crawford Vineyards and aged in oak, this Cabernet exemplifies its robust heritage. One of our finest vintages for flavor, elegance, and color, it may be consumed now or put down for additional aging.

1993 Lemberger: Believed by some to be a sport of Pinot Noir, the Lemberger grape produces a wine of little distinction in Germany, its homeland. But, when grown in the heat of Eastern Washington and aged in oak, a truly outstanding wine results. The flavors of ham, veal, and game are enhanced by this wine.

1993 Merlot: Almost as important a varietal as Cabernet in Bordeaux, Merlot imparts softness, fruit, grace and charm when blended with the world's most famous clarets. Through accident of climate, Eastern Washington grown Merlot is being vinified into a long lived wine equal in the opinion of most to the best Cabernets. Outstanding with beef, pork, lamb, game and pastas made with tomato based sauces.

1993 Oyster Creek Red Reserve: A blend of aged and oaked noble reds selected by the management of Oyster Creek Inn especially for their cellar.

1988 Pinot Noir: Only three or four times in a decade is it warm enough at our vineyard to grow quality Pinot Noir. 1988 was such a vintage. Thirty months aging in oak barrels helps soften the acidity of Pinot Noir but it will improve with additional aging. Excellent with lamb, pork or barbecue. (Available in 375 ml only.)

1995 Apple: A blend of Western Washington apple nectar freshly squeezed from sharp, bitter, aromatic and sweet apples is slowly fermented into this lovely, light and refreshingly crisp wine. Also available in a dry version.

1995 Blackberry: Only the plumpest, juiciest and ripest berries are vinified into this lip-smacking Blackberry wine. Delightfully refreshing when served as an aperitif or can be used as the base of delicious sauces.

1995 Plum: Wild, European, and Japanese plums are harvested from our own orchard, fermented on their skins and blended to produce this delightfully tart, truly fruity and surprisingly long lived wine. Excellent as an aperitif when slightly chilled and served with rich desserts or used as a foundation for an elegant plum sauce.

1995 Raspberry: Only the finest Whatcom County raspberries, selected at their flavorful peak, are used to capture the essence of raspberry. Delightful served as an aperitif or when accompanying rich desserts or as a foundation for that perfect sauce.
